Tex-Mex Black Bean Salad is a vegetarian dish that tastes great and is a pretty salad to serve for lunch or as a light dinner.
Ingredients
- salad greens
- black beans - 2 cans, drained and rinsed
- olives - 1 small can, black, sliced
- tomato - 1 1/2 cup, chopped (plum are best)
- onion - 1/4 cup
- cilantro - 1/4 cup
- lime juice - 2 TBS
- taco seasoning mix - 1 tsp
- shredded cheese - optional, about 1 cup of what you like for topping
Instructions
- Wash and let salad greens dry.
- Mix together the beans, olives, tomatoes, onion, and cilantro. Toss.
- In a small bowl or cup, mix lime juice and seasoning powder.
- Pour lime juice mixture over bean mixture. Toss.
- Serve black bean taco mix over salad greens.
- Add cheese on top if you like.
