Summer Salad with Kidney Beans

Cool Kidney Bean Salad is a great dish for hot summer days. It’s easy to put together. Just chill and serve for a special side dish.

If you’re tired of basic lettuce salads, then try out Cool Kidney Bean Salad. Not only does is taste delicious, it looks really pretty too. This is definitely one that can be made ahead to take to pot luck dinners or barbecues. You probably want to double the recipe if you’re taking it to a group outing like a family reunion.



  1. You'll want to boil your egg first. This can be done along with eggs for deviled eggs, or just make several eggs and have some hard boiled eggs on hand to snack on. The egg can be left out, but it does add to the flavor.
  2. Rinse the kidney beans. You can just pour off the extra water, but I think the various tastes of the salad come through better if the beans are rinsed.
  3. Put the chopped egg, rinsed kidney beans and all the other ingredients in a big bowl and mix everything well.
  4. Chill for a couple of hours or even overnight.
A lady from my Grandma's church in the mountains gave me this recipe. They have some heap good cooks up there.
