Spinach Pesto

This recipe is very good and can be made a day or two before serving (it is better if refrigerated at least overnight). It makes a very nice side dish to accompany grilled chicken.

In food processor or blender, mix together well in following order: 1. oil, garlic, and butter 2. salt, pepper, and spinach 3. basil 4. half of the nuts 5. remaining ingredients Do not heat. To serve, add to hot cooked pasta (I use penne) by large spoonfuls and toss until pasta is coated sufficiently.
